Baked Apples, Berries and Matzo

People who know me know that I prefer lighter desserts.  With Passover and Easter next week, and both holidays associated with big meals, why not try something lighter?  If you remember, this past (Canadian) Thanksgiving, I adapted a baked apple recipe I found online.  For Passover (and Easter, too), I’ve modified it a bit more, creating an apple crumble-like dessert using mixed berries, apples and rustic matzo crumbs.  It’s very easy to make and it can be in the oven while you and your family are having the main meal.

Baked apples, berries and matzo, served with a small scoop of frozen yogurt

Ingredients (note: this recipe is for four, but adjust accordingly):

  • 2 medium sized unpeeled apples, cored and chopped
  • 2 -3 cups of mixed berries (blueberries, strawberries, raspberries, etc…)
  • 2 sheets of matzo, crumbled by hand into rustic pieces
  • 2 tablespoons of honey (or maple syrup)
  • 1-2 tablespoons of ground cinnamon
  • 1 juice of a lemon

Directions:

  • In a bowl, mix the berries and apples.
  • Add matzo, then honey, cinnamon and finally, the lemon juice.  Mix again
  • Place the mixture in a baking dish and baked covered at 350 F for 15 minutes and then bake uncovered for a further 15 minutes

Serve (best with frozen yogurt, ice cream, a dollop of Greek yogurt or coconut/almond “yogurt”).
