I like to go meatless at least once a week (though I don’t always get to) and recently, I decided to make baked eggs. This would also make an amazing New Year’s Day brunch dish (if you’re still looking for ideas).
Ingredients:
- 4 egg whites + 2 whole eggs (large)
- A little more than 1/4 cups of milk
- 1/3 cups of shredded cheese (I used an Asiago, Parmesan and Romano blend), divided
- 4 slices of tomatoes
- 1 cup of chopped onions
- 2 tsp black pepper
- 3 tbsp each of oregano and basil
Directions:
- Line the bottom of the baking dish with the onions and tomatoes
- Sprinkle half of the cheese over the vegetables
- Whisk the eggs, milk, herbs and black pepper together
- Add the egg mixture to the baking dish and top with the remaining cheese
- Place in the oven and bake at 375 until the eggs set, about 20-25 minutes
Serve with crusty bread and a green salad.
