Breadcrumb Crusted Chicken Breasts

This is a very easy recipe that I based out of a healthy eating cookbook.   There isn’t much prep needed, nor does it take a great deal of time. 

Ingredients needed:

Fat-free yogurt

Garlic

Salt

Chicken breasts

1. In a bowl, mix half a cup of fat-free yogurt with two cloves of garlic and a pinch of salt.  Marinate the chicken in the mixture for at least an hour.

2. After marinating, place the chicken in the breadcrumbs (or crumbled cornflakes) until the crumbs cover both sides of the chicken.

3. Place the chicken on a baking dish and into the oven which was preheated to 400 F.  Bake for 20-25 minutes.

Great sides with this dish include coleslaw, potato salad and macaroni and cheese (pictured here with coleslaw and potato salad).  According to the healthy cookbook, the chicken with coleslaw is approximately 520 calories in total.
