I’m actually having a tough time deciding which box to use. The main course box featured holiday treats like turkey and cranberry sauce (which I could either go Chinese with and make my family’s traditional turkey congee or fried rice OR my western twist, which I call Boxing Day (or Black Friday) Casserole – a quick baked dish where you throw everything together because you were too busy during the day trying to catch deals at the mall. Since the main course round just sounded too easy, I’ve decided to create a dessert using the following from the third round box: blueberry pancakes, cheese and herb fritatta, champagne, pink grapefruit – baked blueberry pancake fritters. Not exactly sure if this would actually work – LOL!
Would these make good baked fritters?
I would first slice the blueberry pancakes and fritatta into small pieces, soaking it in a mixture of maple syrup, grapefruit juice and champagne. Using a small ice cream scoop, the batter is shaped and then rolled in cookie crumbs mixed with nuts and sesame seeds and placed on a baking sheet and then placed in an oven for about 15 minutes at 350 F. The fritters are then served with a small ramekin of melted chocolate sauce and another of whipped cream.
