Chopped Canada, Season 2, Episode 18: Dessert with Frozen Carrots

Yes, it can be done!  A package of frozen mixed vegetables usually contains peas, corn and CARROTS among its contents.  All one has to do is isolate the carrots and use THAT to make a dessert.   Typically, the carrots are already in very tiny, smaller-than-bite-sized pieces (think pea sized).  Other ingredients in the dessert basket were: corn flakes, jasmine tea and peach purée.  It actually isn’t that difficult a basket.  What would I make?  Sweet baked eggs with carrots.  It is more of a brunch dish than a true dessert, however.

What kind of dessert could you make with THIS?

This isn’t exactly difficult.  All one needs to do is isolate the carrots, soak them in very strong jasmine tea for several hours (or overnight) and then take it from there.  Corn flakes are placed in a food processor to be turned into crumbs, then placed in a bowl to be used later.

A few hours later, the carrots are drained, placed in ramekins and set aside.  Meanwhile, a custard mixture will be made by mixing egg whites, milk, a bit of very strong jasmine tea, peach purée and sugar.  Think of this as a tea latté with eggs!  Pour the egg mixture into each individual ramekin and then sprinkle the corn flake crumbs on top of the eggs.  The eggs are placed in a 325 F oven and baked until set (about 10-15 minutes).  Once the eggs are set and cooled, some cream cheese and sugar are whipped, placed in a piping bag.  A dollop of cream cheese is topped on each egg and then drizzled with a bit more peach purée.  Chocolate shavings can also be added.
