So what do you make with ingredients such as elk, microwave cake (mix), saba and fenugreek? Roulade, filling the elk with fenugreek, ricotta, spinach and a bit of cake. The dish would be served with some orzo and some vegetables.
Would you be able to make a main course with MICROWAVE CAKE?? (GROSS!)
First of all, I would flatten the elk with a meat hammer, adding a bit of pepper and salt on both sides. Then, it’s time to make the marinade using the saba and mixing it with some garlic, thyme and basil. The elk is placed in the bowl and in the fridge for at least an hour while the filling is prepared. Since the cake is a mix rather than already done, it needs to be “baked” – if you can call it “baking” at all! It is set aside to cool.
Fenugreek and spinach are chopped into smaller pieces, but there is no need to put it into a food processor. It is then mixed with the ricotta and cooled cake. After spreading it onto the elk meat, it is then rolled, tied with string and placed in a 375-400F oven until the meat’s temperature is approximately 137 F for medium rare.
While the elk is in the oven, orzo is cooked according to package directions and a simple side of zucchini and tomatoes are sautéed in a pan. The vegetables are then mixed with the orzo and once the elk is done, it is left to rest for a few minutes before slicing and placed over the orzo pilaf.
Now, I’m not sure how this would taste or if it would work at all. Maybe I’ll actually try it!
