Chopped Canada, Season 2, Episode 21: Rabbit Burgers with Rainbow Green Bean ‘Fries’?

Ummm, sure?  Yes, rainbow coloured “fruit ring” cereal (think Froot Loops) was one of the mandatory ingredients for the main course of Episode 21.  This was along with rabbit legs, spicy pickled green beans and port.  Yes.  What a weird basket.  Difficult, too.  But one needs to use the imagination in order to win, right?  Well, if I were a contestant, I’d attempt at making bunless rabbit burgers (using lettuce instead of bread) with a side of rainbow green bean “fries.”

Would you use this as breading for bean “fries”?

The rabbit comes first.  It is first deboned and then placed through a meat grinder.  Pepper, salt as well as some dried herbs such as basil and oregano are mixed into the meat, along with a bit of the port, one egg white and some breadcrumbs and chopped onion.  They are formed into patties and cooked by baking in an oven at 375 until medium well.

While the rabbit is cooking, we get started on the fries.  The cereal is placed in a food processor, and to make it seem less sweet, some pepper as well as ginger and garlic powders are added.  The green beans are then dredged through some Greek yogurt and then into the cereal and herb mixture.  Then it is placed into the fryer.  While in the fryer, a large piece of lettuce goes on each plate, followed by two small ramekins for condiments such as barbecue sauce and chipotle mayonnaise.  The rabbit is then placed on top of the lettuce, along with sliced onion and a tomato and then topped with another piece of lettuce.  The rainbow pickled green bean “fries” are then placed in a paper lined basket next to the burger.

I might actually attempt this in real life, but I’m not sure if I’ll be using rabbit meat.  Maybe lamb or bison.
