Chopped Canada, Season 3, Episode 6: Eggs Benny with Bitter Melon & White Bass?

If you ever eat bitter melon with my dad, he’ll tell you a story of how guys in his university residence “forced” him to eat bitter melon because that was the only thing available for dinner said evening (because everything was shared family style, as per Chinese custom and the guys KNEW my dad hated the dish).  And bitter melon was one of the mystery ingredients in the appetizer basket on the sixth episode, along with white cod, morning glory muffins and onion powder.  The first thing which came to mind were a form of eggs Benedict.  This dish won’t even take too long to make!

First, the bitter melon would be chopped into small pieces and tossed with the onion and garlic powders and some pureed tomatoes.  This would be used as a sauce for the eggs (as a substitute to hollandaise, which I personally am not a fan of).  The cod is lightly seasoned with salt and pepper and steamed in a steamer and eggs are poached medium.  Once the muffin tops are toasted, the cod is placed on top, followed by the egg.  It is then topped with the bitter melon and tomato sauce and served with a side salad.

 

PS:  Is it STILL eggs Benedict when with cod?  It’s not exactly eggs Natasha, since that’s smoked salmon.  Does it matter??
