I’ve been looking for a stuffing alternative for ages. My family has traditionally made sticky rice stuffing for the Thanksgiving and Christmas, but it isn’t something that I normally keep around my pantry (and didn’t want to get just for one or two meals). I also wanted to cut down on the bread intake, so I searched around the Internet for something different. Then it dawned on me. Why not quinoa? We eat it at least once a week, so it’s readily available in the house. So, I decided to make quinoa stuffing instead. Most recipes I found online were pretty similar, so I decided to adapt one for myself. This one is absolutely delicious!
What You’ll Need:
- 2 cups of quinoa (red or regular)
- 4 cups of water
- 2 medium sized bell peppers (any colour)
- 1 Gala apple, skinned and chopped
- 1 small onion, chopped
- 1/4 cup sage, chopped
- 1/4 cup rosemary, chopped
- 1/4 cup thyme, chopped
- 1/8 cup pine nuts (optional)
- 1 heaping teaspoon of minced garlic
- 1 heaping teaspoon of minced ginger
Directions:
- Add quinoa and water, bring to a boil and then lower to simmer for 10 minutes. Fluff and then set aside to cool.
- In a large bowl, mix the onions, apple, peppers, spices and other items.
- Add cooled quinoa, mix
- Stuff into turkey and cook turkey as directed
Additional stuffing, served as another side dish
If you have any left over stuffing, you can reheat it along with some side vegetables to serve as a second side dish.
