Recipe: Maple Balsamic Baked Tofu

You’ve probably seen the picture on Instagram.  I made this baked tofu recipe a couple of weeks ago and my husband and I enjoyed it very much.  It’s not directly inspired by any specific tofu recipe (though it’s based on the maple dijon chicken I made in late 2013) I’ve seen online, just something I decided to put together myself and is fairly easy to do.

Ingredients:

  • 1 package of extra firm tofu
  • 1/4 cup of pure maple syrup
  • 2 tablespoons of grainy mustard
  • 2 tablespoons of balsamic vinegar
  • 1 small onion, chopped (optional)

 

Directions:

  • In a bowl, mix/whisk the syrup, mustard and vinegar.  Set aside
  • Chop onions (if used) and place into the baking dish
  • Slice tofu into eight, approximately equal slices and coat each slice with the sauce before placing the into the dish, over the onions
  • Spoon remaining sauce over the tofu slices before baking in the oven at 375 F for about 30-35 minutes

 

The above dish was served with quinoa tossed with spinach (which I should have chopped/torn into smaller pieces) and bell peppers when we had it.  However, sides such as rice or noodles would be great as well!
