Maple Dijon Chicken with Apples and Onions

Last week, I was trying to come up with a good chicken dinner that was just a little…different.  I was tired of the usual roasted chicken breast with herbs – even when a bit of mustard was added in.  After much Googling, I found an maple, apple and onion chicken recipe from the US Kraft website, but knew that I had to modify it to suit my tastes, so I came up with the following Maple Dijon Chicken with Apples and Onions:

Maple Dijon Chicken with Apples and Onions

What you need:

  • 2 medium to large chicken breasts (totalling about 450 g)
  • 2-3 tablespoons of grainy dijon mustard
  • 1/6 cup of maple syrup
  • 1/3 cup of chicken stock
  • 3 tablespoons of balsamic vinegar
  • 1 medium onion, chopped
  • 1 cooking apple (I used gala apples), sliced, with skin on

Directions:

  1. In a bowl, mix the mustard, maple syrup, chicken stock and balsamic vinegar and marinate the chicken in the liquid for at least an hour in the fridge.
  2. Place the chicken in a baking pan, leaving the liquid in the bowl and top with the chopped onions
  3. Pour the remaining liquid over the onions and cuicken
  4. Set the sliced apples around the chicken and onions
  5. Place the chicken in the oven and bake at 375 F for 45-50 minutes

 

The dish above will serve two or three people.  Serve with mashed potatoes or a carrot and potato mash.
