<p>SIAL 2017, was, as usual, overwhelming.&nbsp; So many brands not yet in the GTA, or even Ontario or Canada, period!&nbsp; Of course, there are brands which are already here, like <a href="http://www.fontainesante.com/en/">Fontaine Santé</a>, known for its hummus (they were sampling just about everything they had &#8211; including beet hummus (which isn&#8217;t available everywhere).&nbsp; And now, they have expanded to sorbets.&nbsp; They were sampling both raspberry and mango, and I have to say, mango is my favourite.&nbsp; The sorbets are already in stores like Whole Foods.&nbsp; Some other old favourites were also there, launching new products or showing recently-launched items.&nbsp; Bottled water brand, <a href="https://www.vosswater.com/index.php/products/sparkling-nutrition/">VOSS</a>, was sampling their fruit infused sparkling water and <a href="http://www.threefarmers.ca">Three Farmers</a> had snack sized pea pops.&nbsp; Other brands were local to the GTA and there to expand their market, such as <a href="http://fruitoftheland.com/">Fruit of the Land</a> (the Beit Yitzhak fruit spreads, which are sweetened with pineapple juice, is a personal favourite) and <a href="https://nomz.ca/">nomz</a> energy balls.</p>

<p>Oh, and there was cheese.&nbsp; Lots and lots of cheese!&nbsp; One of my favourites has to be the fava bean &#8220;cheese&#8221; used in a grilled cheese sandwich by Local Dairy in Ingersoll, Ontario.&nbsp; I liked the taste, but it&#8217;s different from other vegan cheeses I&#8217;ve had, typically made from cashews or soy.&nbsp; The fava bean cheese has a bit more of a savoury taste, resembling hummus, despite the lack of chickpeas.&nbsp; However, the texture is more cheese-like.&nbsp; Local Dairy also carries &#8220;regular&#8221; (i.e. dairy) cheese.&nbsp; I was also liked <a href="http://www.rawesome.ca/">Rawesome</a> (Montreal based and I don&#8217;t believe their products are available in Ontario yet), which is a line of vegan &#8220;cream cheese&#8221; spreads (very creamy!!) and cheesecakes made from cashews.&nbsp;</p>

<p><a href="http://goshfreefrom.co.uk/">GOSH!</a>:&nbsp; Delicious falafels and vegan burger patties from the UK.&nbsp; Flavours include beet, kale and quinoa as well as chickpea, courgette (zucchini) and Moroccan spices.&nbsp; Though these products are pre-packaged, the ingredients list doesn&#8217;t list anything &#8220;weird.&#8221;&nbsp; For example, the chickpea/zucchini/Moroccan spice patty consists of: <em>Chickpeas (29%), Courgette (22%), Red Pepper (13%), Yellow Pepper (13%), Potato Flake, Quinoa, Apricots, Rapeseed Oil, Maple Syrup, Rehydrated Goji Berries, Lemon Zest, Harissa Paste (Red Peppers, Tomato Paste, Chilli, Caraway, Cumin, Rapeseed Oil, Salt, Garlic Puree), Ginger Puree, Coriander, Spices (Cumin, Coriander, Chilli, Turmeric, Fenugreek, Cinnamon, Clove), Onion Powder, Garlic Puree, Salt, Concentrated Lemon Juice</em>.</p>

<p><a href="https://www.smakdab.ca/">Smak Dab</a>: These guys from Manitoba make good mustard.&nbsp; These mustards are small batch and locally made &#8211; their chipotle beer flavour, for example, uses beer from a local brewery &#8211; and, thus, can put extra care on taste and quality into the product.&nbsp; The good news is, Smak Dab is currently in some Ontario stores, including McEwan&#8217;s (of course!) and Bruno&#8217;s.&nbsp;&nbsp; They are also available online at <a href="https://www.foodiepages.ca/producer/Smak_Dab">Foodiepages</a>.&nbsp; Smak Dab had its booth in the special Canada 150 section.&nbsp;</p>

<p><a href="http://galifresh.com/">Galifresh</a>:&nbsp; These single-serve fruit purées from Spain are vegan, gluten-free and high-fibre with no added sugars or additives.&nbsp; They also don&#8217;t require refrigeration unless already opened.&nbsp; Flavours include apple, banana/pear and blueberry-strawberry.</p>
<p>So was there anything I DIDN&#8217;T like?&nbsp; Sure, since nothing is perfect.&nbsp; Some reps weren&#8217;t that great at marketing &#8211; some brands didn&#8217;t know exactly what made them different from competitive products (for example, a Chinese yogurt brand couldn&#8217;t exactly tell me HOW they differed from the mainstream AND didn&#8217;t offer samples of flavours which are less common in Canada (such as red date)).&nbsp; I had the same issue with some of the quinoa brands.&nbsp; Knowing how something stands out is important if there are already similar products out there.&nbsp;</p>
<p>In terms of products, I personally wasn&#8217;t such a big fan of Baru Baron.&nbsp; Marketed as &#8220;almonds,&#8221; the snacks are actually a different species all together.&nbsp; They&#8217;re baru seeds from the baru plant, found in Brazil and are a tree nut, according to the press release.&nbsp; They have high nutritional content in terms of protein, minerals and fibre, but the taste wasn&#8217;t a favourite of mine.&nbsp; Perhaps it&#8217;s the resemblance to peanuts, something I do not like (probably due to reactions I&#8217;ve had in the past).&nbsp; I am sure, however, that many people will be fans of baru seeds and I DO recommend them to those who would like its taste.&nbsp;</p>
<p>The event was, as usual, well organized, despite being a little overwhelming (as noted in the opening paragraph).&nbsp; Media received first class treatment (with REAL FOOD in the media space!&nbsp; How often do we get that?&nbsp; NEVER!!!) and the resources media and potential buyers were able to pick up were helpful.&nbsp; For example, I left the event with a tote bag full of pamphlets and brochures (and in some cases, samples, too!).&nbsp; There&#8217;s still quite a bit to go through and I will hopefully be able to write a more detailed review of some products soon.&nbsp;</p>

<p>First, I would crumble the donuts, then mix it with some pomelo juice &#8211; about a tablespoon.  Using a melon baller, the donut and pomelo mix will be scooped out and placed on a tray, to be placed in the fridge for about three or four hours (or in the blast chiller for a few minutes).  While the pops are being chilled, the licorice is melted stovetop and the peanuts are ground.</p>
<p>To create the actual donut cake pop, first, a stick is dipped into into the licorice and then pierce one of the donut balls.  Then the donut ball itself is dipped into the licorice, followed by the peanut crumbs.  It is then set aside.  It will then be repeated with the remaining balls.  This would be a great snack for a party.</p>
<p>Note: Almonds or walnuts can be used in place of peanuts.  To make it nut-free, graham crackers can be used, too.</p>

										<content:encoded><![CDATA[<p>A while back, I made the mistake of purchasing vanilla yogurt instead of plain for a curry dish I had planned to cook.  Whoops!  I ended up making something else with the chicken due to the mistake.  However, on Chopped Canada this past weekend, vanilla yogurt was part of the mandatory ingredients list for the appetizer round, along with canned salmon, parsley root and canary melon.  Even though the ingredients seem fairly simple, the yogurt is definitely a throw-off.  Sweet yogurts, especially vanilla just don&#8217;t work in savoury dishes.  Well, so we think.</p>

<p style="text-align: center;"><strong><em>What would you make with this, vanilla yogurt, parsley root and canary melon?</em></strong></p>
<p>We saw a lot of salmon salads and salmon cakes on the show, so instead, I&#8217;d make salmon wonton, served over a bed of arugula with a melon and vanilla yogurt dip!  First, I&#8217;d chop the parsley root along with some chives, mixing it with the salmon, a bit of soya sauce, minced garlic and grated ginger, with a bit of yogurt to bind the mixture.  The filling will then be placed in wonton (or what Cantonese speakers call gao gee) wrappers, closed.  The melon will then be chopped into smaller pieces, placed in a food processor with more yogurt and a bit of hot sauce to create a dip for the dumplings.  The dumplings are then off to the deep fryer to cook for about three minutes.</p>
<p>If I were a contestant, three dumplings would be placed on each judge&#8217;s plate with the sauce in a small ramekin.  However, in real life, this dish could be a good hors d&#8217;oeuvre at a cocktail party, so it would likely be served on a platter (with or without the greens) with a larger ramekin or bowl of dip in the centre.  The dumplings could also be baked or panfried.  Steaming would work as well, but I would suggest a different dip as creamy, thick sauces don&#8217;t usually work well for steamed dumplings!</p>

<p><strong>Ingredients:</strong></p>
<ul>
<li>1 cup of brown rice flour</li>
<li>1/2 cup of spelt flour</li>
<li>1/4 cup each of amaranth and almond flour</li>
<li>3 bananas, puréed</li>
<li>2 eggs</li>
<li>1/4 cup of skim milk</li>
<li>1/4 cup of maple sugar</li>
<li>1/4 cup of non-fat or low fat Greek style yogurt</li>
<li>1 1/2 teaspoons of baking powder</li>
<li>1 teaspoon vanilla</li>
<li>2 teaspoons cinnamon</li>
<li>1 tablespoon apple butter</li>
</ul>
<p><strong>Directions:</strong></p>
<ul>
<li>Mix the sugar, eggs, milk, apple butter and yogurt together and then add the puréed bananas.  Mix again.</li>
<li>Add the dry ingredients and mix until well-combined</li>
<li>Pour mixture into a loaf pan and bake at 375 F for 55-60 minutes</li>
</ul>
<p>Let the bread cool for about five to 10 minutes before slicing.  This bread should be super moist (the original recipe calls for two bananas, while I&#8217;ve added an extra one to mine).  It&#8217;s great with a bit of ricotta or quark spread!  Freezes very well and tastes great toasted with a bit of jam.</p>

<li>6 small carrots</li>
<li>1 tablespoon of minced garlic</li>
<li>1/4 to 1/3 cup of plain Greek yogurt (I used non-fat)</li>
<li>A splash of milk (optional, as the yogurt will give the dish a fairly creamy texture)</li>
</ul>
<p><strong>Directions:</strong></p>
<ol>
<li>Peel the potatoes and carrots and then chop them into smaller pieces</li>
<li>Boil them in water with the garlic for 20-25 minutes</li>
<li>Place in a bowl, add black pepper, if desired, and use a masher to mash the vegetables with the yogurt</li>
<li>Add milk until you get your desired texture (optional)</li>
</ol>
<p>The above recipe will serve 2-4 people.</p>

<p>A pretty standard steps of first breaking down the matzoh (three sheets in this case) using cold water and then cooking it with eggs (two whole eggs plus two egg whites, beaten). However, instead of chicken fat, the matzoh and eggs were cooked in avocado oil, along with some chopped onions.  It was then served with some guacamole/salsa fresco dip.  My husband gave it a thumbs up!</p>

<p>I actually ripped the parsley by hand.  I tried chopping it, but have come to realize that I need something much sharper.  Anyway, the tabouli is pretty much a standard recipe (with fresh lemon juice, green onions, tomatoes (I used cherry tomatoes and quartered them) and a little bit of olive oil.  There are no cucumbers in this recipe) and replaced bulgar with rainbow quinoa.</p>

<p>The was heavily influenced by a <a href="http://www.cookwithcampbells.ca/en-ca/Recipes/spicedlegoflamb.aspx" target="_blank">Cook with Campbell&#8217;s recipe</a> (FYI: my husband works in their marketing department at Campbell&#8217;s, so I get a lot of tips on recipes) with very little modification &#8211; pretty much just the cooking time, as my piece of lamb was a bit smaller.</p>

<p>I used three different kind of mini-potatoes (yellow skinned, red skinned and purple), threw in some dried spices and a bit of vegetable broth and placed it in the oven at 450 F for 45 minutes.  With about 25 minutes left, I threw in cherry tomatoes, and with 15, the asparagus and bell peppers.  A little extra dried spice and broth went in at that time as well.</p>

<p>This was influenced by two similar recipes (see <a href="http://cookingontheside.com/9-layer-no-bake-matzo-cake/?utm_source=feedburner&amp;utm_medium=feed&amp;utm_campaign=Feed%3A+CookingOnTheSide+%28Cooking+On+the+Side%29" target="_blank">here</a> and <a href="http://theshiksa.com/2010/02/08/easy-no-bake-chocolate-matzo-cake/" target="_blank">here</a>).  The vanilla yogurt and strawberry filling was my idea, as was soaking the matzoh in Moscato wine (Barefoot in this case).  If one is observing kosher traditions, I recommend replacing the yogurt with an almond or coconut equivalent rather than a more basic non-dairy whip (gross!).  If I had to do it over, I would have used a semi-sweet chocolate rather than adding maple syrup to give it a sweeter taste.</p>

<p>The good thing about these yogurts is that they are already stirred, so there&#8217;s no need to mix flavoured versions before consuming.  And because it&#8217;s &#8220;regular,&#8221; full-fat yogurt, it is much creamier than what I&#8217;m used to.  Out of the the two flavoured versions I had, honey was the best in terms of taste while strawberry was a little bit too sweet.  Regular wasn&#8217;t bad, but again, I would have preferred that it was low fat or fat free, if I am going to mix it with something.  I would consider using full fat as a dip, however.</p>

<p>Astro Original Greek Yogourt contains no gelatin, and is certified kosher.  In addition to the three flavours that I tried, peach and fat-free strawberry are also available.  I am a little disappointed that the website does not list fat-free plain as it could potentially be very popular, especially as an even lower-fat replacement for coconut milk in curries or to mix with muesli at breakfast.</p>

<p>Despite the fact that this was not the normal yogurt I eat, it was definitely very good.  I would encourage the people at BioBest/Astro to develop low fat or fat free versions of honey and plain (considering that other brands already have these flavours) to further expand their appeal.</p>

<p>This is a very easy recipe that I based out of a healthy eating cookbook.   There isn&#8217;t much prep needed, nor does it take a great deal of time. </p>
<p>Ingredients needed:</p>
<p>Fat-free yogurt</p>
<p>Garlic</p>
<p>Salt</p>
<p>Chicken breasts</p>
<p>1. In a bowl, mix half a cup of fat-free yogurt with two cloves of garlic and a pinch of salt.  Marinate the chicken in the mixture for at least an hour.</p>
<p>2. After marinating, place the chicken in the breadcrumbs (or crumbled cornflakes) until the crumbs cover both sides of the chicken.</p>
<p>3. Place the chicken on a baking dish and into the oven which was preheated to 400 F.  Bake for 20-25 minutes.</p>
<p>Great sides with this dish include coleslaw, potato salad and macaroni and cheese (pictured here with coleslaw and potato salad).  According to the healthy cookbook, the chicken with coleslaw is approximately 520 calories in total.</p>
