Valentine’s Day Solo: Treat Yourself to Salmon, Spinach and Bulgur

Valentine’s Day is less than a week away, and for those of us who’re staying in, there’s no reason why you can’t celebrate, even if you don’t have a date!  Forget take-out or ice cream!  Love yourself and treat yourself to a nice, quick healthy meal. This one pot dinner with salmon, bulgur and spinach is very easy to make.

Quick salmon and spinach with bulgur:

What you need:

  • 1 piece of salmon fillet
  • 1/2 teaspoon each of garlic powder, sage and black pepper (if you want, you can also add 1/2 teaspoon each of basil and oregano)
  • 2 cups of frozen spinach (and any other frozen vegetables if you want)
  • 1/2 cup of bulgur
  • 1 cup of vegetable broth

Method:

  1. Sprinkle herbs onto the fish (this can be done the night before or in the morning) and place in fridge
  2. In a shallow sauce pan, place the spinach and broth and bring to boil
  3. Stir in bulgur and place the salmon on top.
  4. Cover and let the food simmer for 12-15 minutes or until all the liquid has evaporated.  Check and add more broth if liquid disappears too quickly.

*Note: If you don’t have bulgur, try quinoa or instant rice.  This meal is a larger portion, so if it’s too much, you can pack some up for lunch the next day.
