Valentine’s Day is less than a week away, and for those of us who’re staying in, there’s no reason why you can’t celebrate, even if you don’t have a date! Forget take-out or ice cream! Love yourself and treat yourself to a nice, quick healthy meal. This one pot dinner with salmon, bulgur and spinach is very easy to make.

Quick salmon and spinach with bulgur:
What you need:
- 1 piece of salmon fillet
- 1/2 teaspoon each of garlic powder, sage and black pepper (if you want, you can also add 1/2 teaspoon each of basil and oregano)
- 2 cups of frozen spinach (and any other frozen vegetables if you want)
- 1/2 cup of bulgur
- 1 cup of vegetable broth

Method:
- Sprinkle herbs onto the fish (this can be done the night before or in the morning) and place in fridge
- In a shallow sauce pan, place the spinach and broth and bring to boil
- Stir in bulgur and place the salmon on top.
- Cover and let the food simmer for 12-15 minutes or until all the liquid has evaporated. Check and add more broth if liquid disappears too quickly.
*Note: If you don’t have bulgur, try quinoa or instant rice. This meal is a larger portion, so if it’s too much, you can pack some up for lunch the next day.
