So, if you&#8217;re looking for something that is vegetarian or vegan, but not traditional Chinese food, you might want to try this lentil and chickpea stew, inspired by a <a href=\"http:\/\/www.canadianliving.com\/food\/lentil_curry_with_squash_and_spinach.php\" target=\"_blank\">lentil curry recipe I found online<\/a>.\u00a0 It&#8217;s fairly simple and takes about an needed:<\/strong><\/p>\n<ul>\n<li>1\/2 cup of (dried) chickpeas<\/li>\n<li>1 tablespoon of oil<\/li>\n<li>1\/2 cups of lentils<\/li>\n<li>1 tablespoon of flour (the original recipe uses all-purpose, but I used buckwheat for mine)<\/li>\n<li>1\/2 pounds of butternut squash<\/li>\n<li>3-4 medium sized parsnips<\/li>\n<li>1\/2 a medium to large onion, chopped<\/li>\n<li>1 medium sized zucchini, chopped<\/li>\n<li>1 teaspoon of curry powder<\/li>\n<li>1 teaspoon of cumin<\/li>\n<li>1 teaspoon of black pepper<\/li>\n<li>2 cloves of garlic<\/li>\n<li>1 teaspoon of chopped\/minced ginger<\/li>\n<li>2-2 1\/2 cups of water, vegetable broth or a mixture of both<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<p style=\"text-align: center;\"><a data-recalc-dims=\"1\" \/><\/a><\/p>\n<p style=\"text-align: center;\"><strong><em>Chickpea and Lentil Stew, plated and served with pearl couscous and a dollop of Greek yogurt (feel free to replace with vegan alternative)<\/em><\/strong><\/p>\n<ol>\n<li>Soak (if using dried) and cook chickpeas according to package directions (most packages recommend that one soak dried chickpeas for 6-8 hours).\u00a0 Set aside.<\/li>\n<li>In a large pan\/dutch oven, heat the oil, garlic and ginger.\u00a0 Cook for about 1-3 minutes.<\/li>\n<li>Mix in the onions, flour and spices.\u00a0 Stir for another minute<\/li>\n<li>Add the liquids and lentils, bring to a boil and allow to simmer for 30 minutes.\u00a0 If you notice that the liquids are lowered, add additional water and\/or broth, add an additional 1\/4 to 1\/2 cups.<\/li>\n<li>After 30 minutes, add squash, parsnips, chickpeas and zucchini.\u00a0 Cook until squash is tender<\/li>\n<\/ol>\n<p>Serve with your starch\/grain of choice (I
